Easy Focaccia Bread

Ingredients:
1 tsp white sugar
1/4 oz active dry yeast
1/3 cup warm water
2 cups all purpose flour
2 Tbsp olive oil
salt
Herbs for topping

Method:
In a small bowl dissolve sugar and yeast in warm water. Leave to foam for 10 minutes.
In a large bowl combine flour with the yeast mixture stirring to combine well. Stir in additional water slowly until dough pulls together. Knead briefly until smooth.
In a lightly oiled bowl place dough in a warm place and let it rise for 30 minutes.
Preheat oven to 475 degrees F.
Deflate dough and turn out onto a lightly floured board. Knead briefly. Roll out dough and dimple. Brush with olive oil. Sprinkle with salt and herbs. Bake for 20-30 minutes.
